wontons

4 Wontons

* Wanton dough was pre-made by the family and we did not learn how to make the wantons dough specifically. In general wantons are made from a wheat flour, egg, water and salt.

- Roll out dough to be very thin and cut into triangles. Steam for 2-3 minutes. Lay out to dry (do not stack). These can be kept for 2 days
- Deep fry 4 wonton triangles and set aside while preparing the topping

Topping:
- Diced 1/3 green bell pepper
- Diced 1 tomato
- Diced 1 carrot
- Diced 1/4 pineapple
- Chopped 2 scallions
- Diced 1/4 white onion

- Saute 3 cloves diced garlic, vegetable oil, 1/4c water, 1/2 tsp chili sauce**, 1/4c tomato sauce for 3 min.
- Add dices tomatoes, carrots, white onion and green peppers. Saute 2-3 min.
- Add pineapple
- Add black pepper to taste, 1/2 tsp finely chopped bouillon, 1/2 tsp sugar and 1/2 tsp flour to thicken
- Add chopped scallions
- 15 sec more then remove from heat and scoop topping evenly on each wonton

- Top wontons with fresh cilantro, onion crisps and sprinkle with black pepper

** Chili Sauce:
- Diced red chilis (remove 1/2 of the seeds inside)
- water
- vegetable oil
- sugar
- diced onion
- salt

Ratio should be 75% chilis, 5% onion, 3% oil, 2% salt, 10% water, 5% sugar

Saute for 10 minutes so it becomes a paste. This paste can be used for anything.
